Cauliflower, Tumeric and Blackpepper recipe

1 Tbsp. (15 ml) vegetable oil
1/3 cup (75 ml) onions, minced
1 cup (250 ml) celery, chopped
1 Tbsp. (15 ml) ground turmeric
2 Tbsp. (30 ml) flour
3 cups (750 ml) low-fat chicken broth
4 cups (1 L) cauliflower, cut into small bouquets
Salt and ground pepper

In a pot, slowly cook the onions and celery in the oil. Add the turmeric and cook for one minute.

Add the flour and mix. Slowly pour in the broth, add the cauliflower and bring to a boil.

Salt and pepper to taste. Let simmer for 25 minutes.

Reduce to a cream using a mixer and serve immediately. Serves 4.
